Many people have heard of rice pudding, but what about quinoa pudding? Quinoa is extremely healthy and packed with much more protein and nutrients than rice. With the addition of Purely Inspired® 100% Plant-Based Protein, this makes for a nutrient- and protein-packed choice!

Ingredients
- 1 cup quinoa, rinsed
- 2 cans (14 oz.) coconut milk
- 1 tbsp. maple syrup or honey
- 1 scoop Purely Inspired® Organic Protein
- 2 tbsp. cocoa powder
Directions
- Combine quinoa, coconut milk and maple syrup in a medium saucepan over medium heat and bring to a boil. Lower heat and simmer for 20 to 30 minutes, stirring often, until quinoa has cooked through and milk has started to thicken.
- Let the quinoa cool, then stir in Purely Inspired® 100% Plant-Based Protein and cocoa powder.
